Danielle Cave is 1 day from submitting her PhD thesis on aged-care foodservices and the occurrence of food fortification in these settings. We discuss the need for versatility in this setting and personalisation of nutrition services for these residents. There are some very important questions asked in the 6 studies which span Danielle’s research including why aren’t previous strategies sustained in practice? How to use data collection tools to measure fortified food acceptability by patients? What do staff think about the usability of fortification products? and can a liquid based fortification strategy support protein consumption in these patients and what is its acceptability? Dr Lachlan Mitchell is interested in sports nutrition and exercise. His original research journey started in understanding the dietary strategies used by natural bodybuilding competitors in the lead up and post competition phases with the late Associate Professor Helen O’Connor as his primary supervisor; a privilege which is still serving him today. He has started a dream position as a lecturer at the Australia Catholic University in Sydney nearly one year ago where he has started to plan his new research in energy expenditure, body composition changes and the metabolic adaptations experienced during this time. We discuss his research journey during his PhD and post doc in Dublin where he looked at obesity in the adolescent population inside a dataset of 20,000, natural bodybuilding, and his aspiration to contribute to the Sports Nutrition profession here in Australia. PhD Candidate Alex Manson is interested in the opportunity for food to be provided in the school environment. Her thesis is examining perceptions of the current school food system and the features that influence parental acceptability of a potential school-provided meal system in Australia. We discuss the benefits of this potential system such as children’s school attendance, equal nutrition provided for all students regardless of SES, nutrition education, and the release of parent and family burden for the time and commitment to preparing school lunches. Alex is one month out from her PhD confirmation (the first major milestone here in Australia); we talk about her research progress and journey from undergraduate nutrition to honours and now full-time candidature including some past RA work. Melissa has just finished her PhD and is now working at Behaviour Works Australia, she has a background in anthropology where she studied her friends in a karaoke bar as her project and is also a big fan of gardening. We discuss her PhD studies on peoples connection with nature and how to measure their relationship to nature. Additionally, we talk about Melissa's current work which is also very interesting and is investigating psychedelics influence in treating trauma. Melissa's research is focussed on the evaluation and qualitative data within Monash's Food is Medicine course, once containing 60,000 participants and 100,000 comments. Once Susan decided to go on a quarter life crisis trip overseas and try and find herself, she completely changed her perspective. Susan brought in the first mindfulness based leadership program to Australia 20 years ago after attending a conference with the Dalai Lama and has been coaching individuals, organisations and teams ever since. Susan and her business partner have written and published 3 books together, and Susan is publishing her 4th book later this year 'Spiritually Loose'. We have a great conversation about mindfulness, time and attention, as well as morning routines. The best thing I took away from this conversation is that, 'What you focus on grows'. Enjoy.
